Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package directions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.
  2. Prepare garlic oil and toast breadcrumbs: While the pasta cooks, heat 2 tablespoons of unsalted butter and the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes if using. Sauté for about 1 minute until fragrant, taking care not to burn the garlic. Stir in the seasoned breadcrumbs and cook for 2 to 3 minutes, stirring frequently, until the breadcrumbs turn golden brown and toasted.
  3. Set aside breadcrumb topping: Remove half of the toasted breadcrumb mixture from the skillet and set it aside to use as a crunchy topping later.
  4. Toss pasta in garlic butter sauce: Add the cooked pasta into the skillet with the remaining garlic oil and breadcrumbs. Toss everything to coat the pasta evenly. Stir in the remaining 2 tablespoons of butter, grated Parmesan cheese, and add enough reserved pasta water to create a light, creamy sauce that clings to the noodles.
  5. Season and serve: Adjust the seasoning with salt and pepper to taste. Serve the pasta topped with the reserved toasted garlic breadcrumbs and sprinkled with chopped fresh parsley for a burst of color and freshness.
