Description

A quick and flavorful Garlic Butter Chicken with Zucchini and Corn recipe that comes together in just 30 minutes. Tender chicken breast cubes are cooked in olive oil, then combined with sautéed zucchini, sweet corn, and a fragrant garlic butter sauce. Perfect for a healthy and delicious weeknight dinner, garnished with fresh parsley for a burst of color and freshness.

Ingredients

Scale

Chicken

  • 1 lb chicken breast, cubed
  • 2 tbsp olive oil
  • Salt & pepper to taste

Vegetables & Sauce

  • 1 tbsp butter
  • 2 zucchini, chopped
  • 1½ cups corn kernels (fresh or frozen)
  • 3 garlic cloves, minced

Garnish

  • Fresh parsley for garnish

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the cubed chicken breast, season with salt and pepper, and cook until golden brown and fully cooked, about 7-8 minutes. Once done, remove the chicken from the skillet and set it aside.
  2. Sauté the Veggies: In the same skillet, melt the butter and add the minced garlic. Cook for about 1 minute until fragrant but not browned. Then add the chopped zucchini and corn kernels, sautéing for 5-7 minutes until the vegetables are tender but still slightly crisp.
  3. Combine and Toss: Return the cooked chicken to the skillet with the sautéed vegetables. Toss everything together to coat the chicken and veggies in the garlic butter sauce. Cook for an additional 2-3 minutes to ensure everything is heated through and flavors meld together.
  4. Season and Serve: Taste and adjust seasoning with additional salt and pepper if necessary. Garnish with freshly chopped parsley and serve hot for a wholesome and satisfying meal.
