Description

A quick and delicious Garlic Chicken with Broccoli and Spinach recipe that combines tender chicken, fresh vegetables, and creamy cheeses to create a comforting low-carb meal perfect for weeknight dinners.

Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

Vegetables

  • 2 cups broccoli florets
  • ½ cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 3-4 cloves garlic, minced

Dairy

  • 4 oz cream cheese, softened
  • ½ cup shredded mozzarella cheese

Seasonings & Oils

  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Season the Chicken: Sprinkle the bite-sized chicken pieces evenly with salt, freshly ground black pepper, and Italian seasoning to infuse them with flavor.
  2. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5 to 7 minutes, stirring occasionally, until the chicken is browned on the outside and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  3. Sauté the Vegetables: Add the remaining 1 tablespoon of olive oil to the same skillet. Sauté the minced garlic for about 30 seconds until fragrant, then add the broccoli florets. Cook the broccoli for 3 to 4 minutes until it becomes slightly tender but still crisp. Stir in the halved cherry tomatoes and cook everything together for another 2 minutes.
  4. Combine Everything: Return the cooked chicken to the skillet with the vegetables. Add the fresh spinach and cook for 1 to 2 minutes until the spinach wilts and incorporates with the other ingredients.
  5. Make It Creamy: Stir in the softened cream cheese into the skillet and continue cooking until it melts completely and blends evenly with the chicken and vegetables. Sprinkle the shredded mozzarella cheese over the top of the mixture and allow it to melt, creating a creamy and cheesy finish.
  6. Adjust Seasoning & Serve: Taste the dish and adjust the salt and pepper as needed. Serve the garlic chicken with broccoli and spinach hot for a comforting and nutritious meal.

Notes

  • For extra flavor, consider adding a squeeze of fresh lemon juice before serving.
  • You can substitute mozzarella cheese with cheddar or Parmesan for variation.
  • To make it dairy-free, replace cream cheese and mozzarella with vegan cheese alternatives.
  • Serve with cauliflower rice or over pasta for a more filling meal.
