Description

Delicious and easy Chicken Roll Ups featuring tender seasoned chicken breasts stuffed with creamy Boursin cheese and melted mozzarella, baked to perfection for a flavorful and satisfying meal.

Ingredients

Scale

Seasoning Mix

  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper

Main Ingredients

  • 1 pound thinly sliced chicken breasts
  • 5.3 ounces garlic & fine herbs Boursin cheese (1 package)
  • ½ cup freshly shredded mozzarella cheese

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C). Line a baking sheet with aluminum foil or parchment paper to prevent sticking and make cleanup easier.
  2. Season Chicken: In a small bowl, mix garlic powder, smoked paprika, Italian seasoning, kosher salt, and ground black pepper. Evenly sprinkle this seasoning blend over both sides of each thinly sliced chicken breast to enhance flavor.
  3. Assemble Roll Ups: Spread a generous layer of garlic & fine herbs Boursin cheese over each seasoned chicken breast. Then sprinkle the shredded mozzarella cheese on top. Starting from one end of each breast, carefully roll them up tightly and place seam-side down on the prepared baking sheet to keep them intact while baking.
  4. Bake: Place the baking sheet in the preheated oven and bake for 35-40 minutes, or until the chicken rolls reach an internal temperature of 165°F (74°C), ensuring they are fully cooked and the cheese is melted and bubbly.

Notes

  • Use thinly sliced chicken breasts for easy rolling; if needed, pound chicken breasts to an even thinness.
  • Ensure the rolls are placed seam-side down to prevent them from unrolling during baking.
  • Use a meat thermometer to check for doneness and avoid overcooking, which could dry out the chicken.
  • Serve with a fresh salad or steamed vegetables for a complete meal.
