Description

A delicious and savory Garlic Mushroom Grilled Cheese sandwich featuring sautéed garlic and thyme mushrooms layered with sharp cheddar on crispy sourdough bread. Perfect for a quick and hearty meal.

Ingredients

Scale

Bread

  • 2 slices sourdough bread

Mushroom Mixture

  • 1 cup fresh mushrooms (button or cremini), chopped
  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter (plus extra for grilling)
  • 1 teaspoon fresh thyme leaves (optional)

Cheese

  • 2-3 slices sharp cheddar cheese

Instructions

  1. Prepare the Ingredients: Chop the mushrooms into small pieces and mince the garlic cloves to prepare for cooking.
  2. Cook the Mushrooms: In a skillet over medium heat, melt 1 tablespoon of unsalted butter. Add the chopped mushrooms and sauté for 5-7 minutes until they become soft and golden brown.
  3. Add Garlic and Thyme: Stir in the minced garlic and fresh thyme leaves (if using). Cook for about 1 minute until the garlic is fragrant, then remove from heat.
  4. Assemble the Sandwich: On one slice of sourdough bread, layer the sautéed mushrooms evenly, then add the sharp cheddar cheese slices on top. Cover with the second slice of bread.
  5. Grill the Sandwich: Heat a skillet over medium-low heat and add a small amount of butter. Place the sandwich in the skillet and grill each side for about 3-4 minutes until the bread is golden brown and the cheese is melted.
  6. Serve: Allow the sandwich to cool slightly before slicing and serving warm for the best flavor and texture.

Notes

  • You can substitute sharp cheddar with your favorite melting cheese such as Gruyere or mozzarella.
  • Fresh thyme adds a lovely herbal note but can be omitted if unavailable.
  • For a vegan version, use plant-based butter and cheese alternatives.
  • Ensure the skillet is on medium-low heat during grilling to prevent burning the bread while allowing the cheese to melt fully.
