Description

This Garlic Parmesan Crockpot Chicken and Potatoes recipe is a hearty and flavorful one-pot meal perfect for cozy dinners. Tender chicken breasts are seasoned and coated in a rich garlic parmesan sauce, layered over seasoned cubed potatoes, and slow-cooked to perfection in a crockpot. Finished with melted mozzarella cheese and an optional ranch topping for extra creaminess, this dish offers a comforting blend of Italian-inspired flavors with minimal effort.

Ingredients

Scale

Potatoes

  • 5 medium-sized potatoes, cubed
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

Chicken

  • 1 lb chicken breasts, cubed
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce, enough to cover the chicken

Topping

  • 1 cup shredded mozzarella cheese
  • Optional: ranch dressing for serving

Instructions

  1. Prepare the Potatoes: Wash and cube the potatoes. Spray the crockpot with cooking spray to prevent sticking. Add the cubed potatoes to the crockpot and drizzle with olive oil. Season with salt, black pepper, garlic powder, and paprika. Stir well to evenly coat the potatoes with the seasonings.
  2. Season the Chicken: Cube the chicken breasts and place them in a bowl. Season with salt, black pepper, paprika, onion powder, and Italian seasoning. Add the minced garlic and mix thoroughly. Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to cover all pieces evenly.
  3. Cook in the Crockpot: Add the seasoned chicken along with the sauce on top of the potatoes in the crockpot. Cover and cook on low for about 6 hours, or until the potatoes are tender and the chicken is fully cooked through. Stir occasionally if possible to mix the flavors.
  4. Add Cheese: Once cooked, sprinkle the shredded mozzarella cheese over the top of the chicken and potatoes. Cover the crockpot again and let the cheese melt for 5-10 minutes before serving.
  5. Serve: Serve the Garlic Parmesan Chicken and Potatoes hot. For extra flavor, optionally top with ranch dressing before serving.

Notes

  • You can substitute ranch dressing with fresh chopped parsley for a lighter garnish.
  • If you prefer, use sweet potatoes to add a different flavor profile.
  • Check for doneness by ensuring the internal temperature of chicken reaches 165°F (74°C).
  • For a spicier twist, add crushed red pepper flakes to the chicken seasoning.
  • Leftovers can be refrigerated up to 3 days and reheated in the microwave or oven.
