Description

A quick and flavorful Garlic Shrimp and Zucchini Noodles recipe perfect for a light, healthy meal ready in just 20 minutes. Tender shrimp are sautéed with garlic and red pepper flakes, then tossed with fresh zucchini noodles and garnished with parsley for a delicious low-carb dinner.

Ingredients

Scale

Shrimp and Zucchini Noodles

  • 1 pound shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized

Seasonings and Oil

  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil: Warm 2 tablespoons of olive oil in a pan over medium heat to prepare for sautéing.
  2. Sauté garlic and red pepper flakes: Add 4 cloves of minced garlic and 1 teaspoon of red pepper flakes to the pan; cook for about 1 minute until fragrant.
  3. Cook shrimp: Add 1 pound of peeled and deveined shrimp, along with salt and black pepper to taste; sauté until the shrimp turn pink and are cooked through, about 3-4 minutes.
  4. Add zucchini noodles: Stir in the spiralized zucchini noodles and cook for 2-3 minutes, just until they are slightly softened but still retain some crunch.
  5. Garnish and serve: Remove from heat and sprinkle with 2 tablespoons of chopped fresh parsley. Serve immediately for best flavor and texture.

Notes

  • For a spicier dish, increase the red pepper flakes to 1.5 teaspoons.
  • Be careful not to overcook zucchini noodles as they can become mushy.
  • Use fresh shrimp for best flavor, but frozen shrimp can be used if thawed properly.
  • Can be served as a low-carb main course or alongside crusty bread for more substance.
