Ingredients
Scale
Vegetables
- 1 medium head cauliflower, cut into florets
- 8 oz cremini mushrooms, halved
- 4 cloves garlic, minced
Seasonings
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and freshly ground black pepper, to taste
Others
- 3 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped (optional)
- 1 tablespoon lemon juice (optional)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it reaches the optimal roasting temperature for perfectly tender and caramelized vegetables.
- Toss Vegetables: In a large bowl, combine the cauliflower florets and halved cremini mushrooms with olive oil, minced garlic, dried thyme, dried rosemary, salt, and freshly ground black pepper. Toss thoroughly until all pieces are evenly coated with the seasoning mixture.
- Arrange on Baking Sheet: Spread the seasoned cauliflower and mushrooms in a single layer on a parchment-lined baking sheet to allow even roasting without overcrowding.
- Roast Vegetables: Place the baking sheet in the preheated oven and roast for 25 to 30 minutes. Stir the vegetables halfway through the cooking time to promote even browning and tenderness. Roast until the cauliflower is golden and tender and the mushrooms are nicely browned.
- Add Finishing Touches: Once roasted, optionally drizzle the vegetables with fresh lemon juice and sprinkle chopped fresh parsley over the top before serving to add brightness and freshness.
Notes
- You can substitute cremini mushrooms with white button mushrooms if preferred.
- Adjust the amount of garlic to your taste for a milder or stronger garlic flavor.
- Make sure to spread vegetables in a single layer for even roasting and to avoid steaming.
- For a spicier kick, add a pinch of red pepper flakes with the herbs.
- This dish can be served warm or at room temperature and makes a great side for grilled or roasted meats.
