Ingredients
Scale
Brownie Batter
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup salted butter, softened
- 4 large eggs
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons fresh lemon zest
Lemon Glaze
- 1 ½ cups powdered sugar
- 2 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
Instructions
- Preheat and prepare pan: Preheat your oven to 350° F (175° C). Grease a 9×13-inch baking pan with non-stick spray or line it with parchment paper to ensure easy removal of the brownies after baking.
- Mix dry ingredients: In a large mixing bowl, whisk together 2 cups of all-purpose flour, 2 cups of granulated sugar, 1/2 teaspoon baking powder, and 1/2 teaspoon salt until well combined.
- Add butter to dry mix: Add 1 cup of softened salted butter to the dry ingredients and stir gently with a spatula until the mixture starts to come together into a crumbly batter.
- Combine wet ingredients: In a separate medium bowl, whisk together 4 large eggs, 1/4 cup freshly squeezed lemon juice, and 2 tablespoons lemon zest until smooth and uniform.
- Incorporate wet into dry: Pour the lemon-egg mixture into the flour-butter mixture. Stir with a spatula until smooth and completely combined. The batter may have a few lumps, which is normal.
- Bake the brownies: Pour the batter evenly into the prepared baking pan. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the brownies comes out mostly clean with a few moist crumbs.
- Cool the brownies: Remove the pan from the oven and allow the brownies to cool completely before applying the glaze to prevent it from melting.
- Prepare lemon glaze: In a small bowl, whisk together 1½ cups powdered sugar, 2 tablespoons fresh lemon juice, and 2 teaspoons lemon zest until smooth and lump-free.
- Glaze the brownies: Pour the lemon glaze over the cooled brownies and spread evenly. Let it set at room temperature until firm.
- Serve: Once the glaze is set, cut into bars, serve, and enjoy the delightful blend of rich, buttery brownies and bright lemon flavor.
Notes
- For easier removal, line your baking pan with parchment paper leaving some overhang on the sides.
- A few lumps in the batter are okay, avoid overmixing to keep brownies tender.
- Use fresh lemons for the best, brightest flavor in both the batter and glaze.
- Ensure brownies are completely cool before glazing to prevent the glaze from melting.
- You can store glazed lemon brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- To intensify lemon flavor, add an extra teaspoon of lemon zest to the batter or glaze.
