Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tbsp fresh lemon juice (optional, for extra zest)
Caprese Topping
- 2 cups cherry tomatoes, halved (or 2 large ripe tomatoes, sliced)
- 8 oz fresh mozzarella (bocconcini or mozzarella balls, sliced)
- ¼ cup fresh basil leaves, torn or chopped
- Salt and pepper, to taste
- 2 tbsp balsamic glaze (or balsamic vinegar reduced to syrup)
Instructions
- Prepare the chicken: Brush the chicken breasts with olive oil and season both sides with salt, pepper, garlic powder, and oregano. For extra flavor, squeeze a bit of lemon juice over the chicken before seasoning.
- Grill the chicken: Preheat your grill to medium-high heat. Grill the chicken for 6–7 minutes per side or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Prepare the Caprese topping: While the chicken is grilling, combine the halved cherry tomatoes, sliced mozzarella, and fresh basil in a bowl. Season lightly with salt and pepper, and toss gently.
- Assemble the dish: Once the chicken is grilled, top each chicken breast with a generous amount of the Caprese mixture. Drizzle with balsamic glaze.
- Serve: Serve immediately as a main dish or with a side of roasted vegetables or a light salad. Enjoy the freshness!
Notes
- For added zest, lemon juice is optional but recommended when seasoning the chicken.
- You can use either cherry tomatoes or large ripe tomatoes sliced for the Caprese topping.
- Balsamic glaze adds a sweet and tangy finish; if unavailable, reduce balsamic vinegar to a syrup consistency as a substitute.
- Ensure chicken reaches an internal temperature of 165°F (75°C) for safe consumption.
- Pairs well with roasted vegetables, a simple green salad, or crusty bread.
