Scale
Base Ingredients
- 1 pound lean ground beef
- 2 medium russet potatoes, peeled and diced into small cubes
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
Seasonings & Mix-ins
- 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
- 1/3 cup water
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels
- Salt and black pepper to taste
Toppings
- 1 cup shredded cheddar or Mexican blend cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup sour cream
- 1/4 cup salsa
- 1/4 cup sliced green onions
Instructions
- Cook the Potatoes: Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 8 to 10 minutes, stirring occasionally, until they are golden brown and tender when pierced with a fork. Season lightly with salt and black pepper, then remove the potatoes from the skillet and set aside.
- Brown the Ground Beef: In the same skillet, add the ground beef and cook for 6 to 8 minutes, breaking it apart with a spoon, until fully browned. Drain any excess grease from the pan if necessary.
- Sauté Aromatics: Add the diced onion to the beef and cook for 2 to 3 minutes until the onion softens. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Add Seasoning and Liquids: Sprinkle the taco seasoning over the beef mixture. Pour in the water and stir everything well. Let it simmer for 3 to 4 minutes until the sauce thickens slightly.
- Incorporate Beans and Corn: Stir in the drained black beans and corn kernels. Cook until the mixture is heated through, about 2 to 3 minutes.
- Assemble the Taco Bowls: Divide the crispy potatoes evenly among four bowls. Top each with the seasoned beef mixture. Sprinkle shredded cheese on top, then add shredded lettuce, diced tomatoes, sour cream, salsa, and sliced green onions according to your taste preferences. Serve immediately.
Notes
- For extra spice, add diced jalapeños or a dash of hot sauce to the beef mixture or as a topping.
- Sweet potatoes can be substituted for russet potatoes for a sweeter flavor and a slight nutritional boost.
- This recipe is excellent for meal prepping and reheats well, making it ideal for quick lunches or dinners throughout the week.
