Dry Ingredients
- 1 1/2 cups rolled oats
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
Wet Ingredients
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened applesauce
- 1/4 cup molasses
- 1/4 cup maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
Optional Add-ins
- 1/2 cup raisins or chopped nuts
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine the rolled oats, whole wheat flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg thoroughly.
- Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, unsweetened applesauce, molasses, maple syrup, egg, and vanilla extract until the mixture is smooth and well combined.
- Combine Wet and Dry: Pour the wet ingredient mixture into the dry ingredients bowl and stir until just combined, making sure there are no dry flour pockets.
- Add Optional Ingredients: Fold in the raisins or chopped nuts if you choose to include them for added flavor and texture.
- Form Cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing each about 2 inches apart. Flatten each cookie slightly with the back of a spoon for even baking.
- Bake: Place the baking sheet in the oven and bake for 10 to 12 minutes, or until the edges of the cookies turn golden brown.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes before carefully transferring them to a wire rack to cool completely, ensuring they set properly.
Notes
- For a softer cookie texture, bake at the shorter end of the time range (around 10 minutes).
- Substitute the coconut oil with almond butter to add a richer, nuttier flavor to these cookies.
- Store cookies in an airtight container at room temperature; they will stay fresh for up to 5 days.
