Scale
Dry Ingredients
- 1 1/2 cups rolled oats
- 1/2 cup almond flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Wet Ingredients
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
Optional Add-ins
- 1/3 cup dark chocolate chips or raisins
- 1/4 cup chopped nuts
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Combine Dry Ingredients: In a large bowl, mix together the rolled oats, almond flour, baking soda, ground cinnamon, and salt until evenly distributed.
- Mix Wet Ingredients: In a separate bowl, whisk the almond butter, honey or maple syrup, large egg, and vanilla extract until the mixture is smooth and uniform.
- Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl with the dry ingredients and stir well to combine. Gently fold in the dark chocolate chips or raisins and chopped nuts if using.
- Portion the Dough: Drop tablespoon-sized portions of cookie dough onto the prepared baking sheet, spacing each about 2 inches apart. Flatten each portion slightly with your fingers or a spoon for even baking.
- Bake the Cookies: Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cookie edges turn lightly golden. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a vegan option, substitute the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water).
- Use maple syrup instead of honey to keep the recipe vegan.
- Feel free to customize with your favorite nuts or dried fruits.
- Store cookies in an airtight container at room temperature for up to 5 days.
- To keep cookies soft, add a slice of bread to the container to retain moisture.
