Description

This homemade wonton soup features tender ground chicken-filled wontons simmered in a flavorful broth infused with ginger, garlic, and soy sauce. Garnished with fresh green onions and cilantro, and complemented by nutritious baby bok choy and mushrooms, it’s a comforting and wholesome Asian-inspired meal perfect for any day.

Ingredients

Scale

Wonton Filling

  • 1 lb ground chicken
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp grated ginger
  • 1/4 tsp white pepper
  • 30-40 wonton wrappers

Soup Base and Vegetables

  • 8 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 2 cups baby bok choy or spinach
  • 1/2 cup sliced mushrooms (optional)
  • Salt and pepper, to taste

Garnish

  • Green onions
  • Fresh cilantro

Instructions

  1. Prepare the wontons: Combine ground chicken, finely chopped green onions, minced garlic, soy sauce, sesame oil, grated ginger, and white pepper in a mixing bowl. Mix thoroughly to combine all the flavors evenly.
  2. Shape the wontons: Place a small spoonful of the chicken mixture in the center of each wonton wrapper. Moisten the edges of the wrapper with water, then fold into a triangle, pressing the edges firmly to seal. Bring the two opposite corners of the triangle together and pinch to form a sealed bundle.
  3. Make the soup base: In a large pot, heat the chicken broth over medium heat. Add soy sauce, sesame oil, grated ginger, and minced garlic, stirring well to blend the flavors. Let the broth simmer gently for 5-7 minutes to infuse the aromatics.
  4. Add vegetables: Add baby bok choy (or spinach) and sliced mushrooms to the simmering broth. Season with salt and pepper to taste. Continue to simmer until vegetables are tender.
  5. Cook the wontons: Carefully drop the prepared wontons into the simmering soup. Cook for 4-5 minutes or until the wontons float to the surface and the chicken filling is cooked through completely.
  6. Serve: Ladle the soup into individual bowls, ensuring each serving has plenty of wontons and vegetables. Garnish with chopped green onions and fresh cilantro for added freshness and flavor. Serve warm and enjoy.

Notes

  • Wonton wrappers can usually be found in the refrigerated section of Asian grocery stores.
  • To prevent wontons from sticking, work with a damp cloth on your workspace and keep unused wrappers covered.
  • Feel free to substitute ground chicken with ground pork or turkey for variation.
  • Adjust soy sauce and seasoning to taste, especially if using low sodium broth.
  • Adding mushrooms is optional but adds extra umami and texture to the soup.
