Description

Instructions

  1. Heat the oil: Heat olive oil in a large skillet over medium heat to prepare for sautéing the vegetables.
  2. Sauté vegetables: Add the diced onion, red bell pepper, and jalapeño to the skillet. Cook for 3-4 minutes until the vegetables are softened and fragrant.
  3. Add corn: Stir in the drained corn and cook for an additional 2-3 minutes, allowing the corn to warm through and combine with the sautéed vegetables.
  4. Create creamy base: Reduce heat to low, then add softened cream cheese and sour cream. Stir continuously until the mixture becomes smooth and creamy.
  5. Mix in cheese and spices: Add 1 1/2 cups of shredded Colby Jack cheese along with chili powder, garlic powder, paprika, salt, and pepper. Stir until the cheese is fully melted and everything is well combined.
  6. Prepare for baking: Pour the creamy mixture into a baking dish and evenly top it with the remaining 1/2 cup of shredded Colby Jack cheese.
