Ingredients

Scale

For the Dough

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 3/4 cup warm water (110°F/45°C)
  • 2 tablespoons olive oil

For the Filling

  • 1 pound ground beef
  • 3 cloves garlic, minced
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)

For Assembly

  • 2 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced (for garlic butter glaze)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the warm water, sugar, and yeast. Let it sit for 5 minutes until it becomes foamy. Add the flour, salt, and olive oil, mixing until a dough forms. Knead on a floured surface for about 8 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
  2. Cook the Beef Mixture: While the dough is rising, heat a skillet over medium heat. Add the ground beef, breaking it apart as it cooks. When nearly browned, add the minced garlic, salt, pepper, oregano, and red pepper flakes if using. Cook for another 3–4 minutes until the beef is fully cooked and fragrant. Drain excess fat and let cool slightly.
  3. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Shape the Bombs: Punch down the risen dough and divide it into 9 equal portions. Flatten each piece into a 4-inch circle. Place a spoonful of the beef mixture in the center, followed by some Parmesan and mozzarella cheese. Fold the dough over the filling and pinch edges closed, shaping into a ball. Place each ball seam-side down on the prepared baking sheet.
  5. Apply Garlic Butter Glaze: Mix melted butter with minced garlic. Brush each dough ball generously with the garlic butter mixture to enhance flavor and help browning.
  6. Bake: Bake in the preheated oven for 20–25 minutes or until the bombs are golden brown and the cheese inside is melted and bubbly.
  7. Garnish and Serve: Remove from the oven and brush again with garlic butter. Sprinkle with fresh chopped parsley if desired. Let cool for 5 minutes before serving warm.

Notes

  • Ensure the dough is kneaded well to develop gluten for a chewy texture.
  • You can substitute ground turkey or chicken for a lighter option.
  • For extra cheesy bombs, add additional shredded cheese inside or on top before baking.
  • Serve with marinara sauce or ranch dressing for dipping.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven for best results.
