Description

Delicious and easy-to-make Pizza Enchiladas combine the best of two favorites — savory pizza fillings wrapped in warm tortillas, topped with gooey melted mozzarella and zesty pizza sauce. This baked dish is perfect for a quick weeknight meal that serves six and takes just 30 minutes total.

Ingredients

Scale

Enchiladas

  • 6 slices flour tortillas
  • 2 cups shredded mozzarella cheese, divided
  • 8 oz pizza sauce, divided
  • 1 tsp garlic salt (optional)
  • Pizza fillings of your choice, such as sausage, pepperoni, mushrooms, etc.

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the enchiladas.
  2. Prepare the baking dish: Grease a 9×13-inch baking dish thoroughly to prevent sticking and facilitate easy cleanup.
  3. Layer pizza sauce: Pour half of the pizza sauce evenly into the bottom of the greased baking dish as the base layer for the enchiladas.
  4. Add seasoning: Sprinkle garlic salt over the pizza sauce if you want to enhance the flavor with a garlicky touch.
  5. Assemble enchiladas: Take one flour tortilla and place a handful of shredded mozzarella in the center. Add your preferred pizza toppings on top of the cheese.
  6. Roll tortillas: Roll the tortilla tightly around the fillings and place it seam-side down in the baking dish to keep it sealed during baking.
  7. Repeat assembly: Continue assembling and rolling the remaining tortillas, cheese, and toppings until all are used and placed in the baking dish.
  8. Add remaining sauce: Pour the remaining pizza sauce over the rolled enchiladas, coating them generously.
  9. Top with cheese: Sprinkle the reserved 1/2 cup of shredded mozzarella evenly over the top of the sauced enchiladas.
  10. Bake: Place the baking dish in the preheated oven and bake for 15–20 minutes, or until the cheese is melted, bubbly, and golden in spots.
  11. Rest and serve: Remove the dish from the oven and let it rest a few minutes before serving to allow the flavors to settle and make handling easier.

Notes

  • Use your favorite pizza toppings such as pepperoni, cooked sausage, mushrooms, onions, or bell peppers.
  • Garlic salt is optional but adds a nice depth of flavor.
  • For extra crispy edges, broil for an additional 1-2 minutes after baking but watch closely to avoid burning.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • This recipe can be made gluten-free by substituting gluten-free tortillas.
