- 6 slices flour tortillas
- 2 cups shredded mozzarella cheese, divided
- 8 oz pizza sauce, divided
- 1 tsp garlic salt (optional)
- Pizza fillings of your choice, such as sausage, pepperoni, mushrooms, etc.
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the enchiladas.
- Prepare the baking dish: Grease a 9×13-inch baking dish thoroughly to prevent sticking and facilitate easy cleanup.
- Layer pizza sauce: Pour half of the pizza sauce evenly into the bottom of the greased baking dish as the base layer for the enchiladas.
- Add seasoning: Sprinkle garlic salt over the pizza sauce if you want to enhance the flavor with a garlicky touch.
- Assemble enchiladas: Take one flour tortilla and place a handful of shredded mozzarella in the center. Add your preferred pizza toppings on top of the cheese.
- Roll tortillas: Roll the tortilla tightly around the fillings and place it seam-side down in the baking dish to keep it sealed during baking.
- Repeat assembly: Continue assembling and rolling the remaining tortillas, cheese, and toppings until all are used and placed in the baking dish.
- Add remaining sauce: Pour the remaining pizza sauce over the rolled enchiladas, coating them generously.
- Top with cheese: Sprinkle the reserved 1/2 cup of shredded mozzarella evenly over the top of the sauced enchiladas.
- Bake: Place the baking dish in the preheated oven and bake for 15–20 minutes, or until the cheese is melted, bubbly, and golden in spots.
- Rest and serve: Remove the dish from the oven and let it rest a few minutes before serving to allow the flavors to settle and make handling easier.
