Description

This Instant Pot Beef and Cheddar Sandwiches with Spicy Cheese Sauce recipe offers a delicious and hearty meal featuring tender shredded beef cooked to perfection in the Instant Pot. Paired with a creamy, spicy cheddar cheese sauce and toasted sandwich rolls, this dish is perfect for a comforting and flavorful lunch or dinner.

Ingredients

Scale

Beef and Sandwiches

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 6 sandwich rolls or hoagie buns
  • 12 slices cheddar cheese

Spicy Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon mustard powder
  • Salt to taste

Instructions

  1. Season the Beef: Rub the beef chuck roast thoroughly with salt, black pepper, garlic powder, and onion powder to enhance flavor.
  2. Sear the Beef: Set the Instant Pot to sauté mode and heat olive oil. Brown the beef on all sides until a crust forms, then remove it temporarily.
  3. Deglaze the Pot: Add beef broth, water, and Worcestershire sauce to the pot. Scrape the bottom with a wooden spoon to loosen browned bits for added flavor.
  4. Pressure Cook: Return the beef to the Instant Pot, secure the lid, and cook on high pressure for 60 minutes. Allow a natural pressure release for 15 minutes, then manually release any remaining pressure.
  5. Shred the Beef: Remove the beef and shred it using two forks. Return the shredded meat to the pot with the cooking juices to keep warm and flavorful.
  6. Make the Spicy Cheese Sauce: In a saucepan over medium heat, melt butter. Whisk in the flour and cook for 1 minute to form a roux. Gradually add milk while whisking continuously until the sauce thickens smoothly.
  7. Incorporate Cheese and Spices: Stir in shredded cheddar cheese, paprika, cayenne pepper, mustard powder, and salt. Mix until the cheese melts completely and the sauce is smooth.
  8. Assemble the Sandwiches: Cut the sandwich rolls and pile generously with the shredded beef. Top with cheddar cheese slices and drizzle with the spicy cheese sauce. Serve warm for the best experience.

Notes

  • For extra flavor and texture, toast the sandwich rolls before assembling.
  • Adjust the cayenne pepper quantity to modify the level of spiciness according to your preference.
  • Substitute provolone cheese for cheddar if you prefer a milder cheese flavor.
