Ingredients
Scale
Oils
- 2 tablespoons oil or butter (avocado oil recommended)
- 1 teaspoon toasted sesame oil
Noodles
- 8 ounces thin spaghetti or Canton noodles
Vegetables and Aromatics
- 8-10 cloves garlic, finely diced or minced
- 2 scallions or green onions, white and green parts separated and chopped
Sauces and Seasonings
- 2 tablespoons light soy sauce
- 1 tablespoon oyster sauce (vegan substitute if needed)
- 1/2-1 tablespoon red chili sauce (Sambal Oelek recommended)
- 1 teaspoon brown sugar
- Salt to taste
Liquids
- 2 cups vegetable broth or water
Instructions
- Heat the Instant Pot: Turn on the Instant Pot and set it to Saute mode to begin heating.
- Saute Garlic and Scallions: Add the oil and toasted sesame oil to the pot. Once hot, sauté the minced garlic and the white parts of the scallions until fragrant and lightly golden, which should take about 1-2 minutes.
- Prepare the Noodles: Break the spaghetti noodles in half so they fit into the Instant Pot. Place them in a zigzag pattern inside the pot to prevent sticking.
- Add Sauces and Sugar: Pour the light soy sauce, oyster sauce, red chili sauce, and sprinkle the brown sugar evenly over the noodles.
- Add Broth: Pour in 2 cups of vegetable broth or water, ensuring that the noodles are fully submerged in liquid for even cooking.
- Pressure Cook: Seal the lid of the Instant Pot and set it to pressure cook on high for 5 minutes.
- Release Pressure and Rest: Once cooking is complete, perform a quick pressure release. Open the lid, stir the noodles thoroughly, and allow them to rest for 2 minutes to absorb the flavors.
- Finish and Serve: Taste and adjust salt if necessary. Garnish with the green parts of the scallions and toasted sesame seeds before serving.
Notes
- You can substitute spaghetti with any thin noodles like Canton or linguine for a slight variation in texture.
- For a vegan version, use vegan oyster sauce or mushroom-based sauce alternatives.
- Adjust the amount of chili sauce to suit your spice preference.
- To add protein, consider topping with cooked tofu, shrimp, or chicken after cooking.
- Use vegetable broth for enhanced flavor or water if you prefer a lighter taste.
- The noodles cook quickly, so do not exceed the recommended pressure cooking time to avoid overcooking.
