Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly grease a small baking dish (8×8 or similar) to prevent sticking.
- Sauté Vegetables: Heat the olive oil in a skillet over medium heat. Add the diced red onion, minced garlic, and diced bell pepper. Cook for 4–5 minutes until the vegetables are soft and fragrant.
- Add Beans and Spices: Stir in the drained black beans, cumin, chili powder, smoked paprika, salt, and pepper. Cook for an additional 2 minutes to allow the flavors to meld together.
- Assemble Layers: Spread the sautéed vegetable and bean mixture evenly into the prepared baking dish. Pour the red enchilada sauce over the top. Using a spoon, create four small wells in the sauce for the eggs.
- Add Eggs and Cheese: Crack one large egg into each well. Then sprinkle the shredded cheese evenly over the entire dish.
- Bake: Place the baking dish in the preheated oven and bake for 15–18 minutes, or until the egg whites are fully set and the yolks reach your desired doneness.
