Stuffed Jalapenos
- 2 jalapenos, sliced lengthwise, seeds and membranes removed
- 4 ounces cream cheese
Sandwich Fillings
- 4 slices bacon, cooked crispy
- 2 slices Monterey Jack cheese
- 2 slices sharp cheddar cheese
- Chopped cilantro (optional)

- 4 slices Italian bread
- Pats of butter (for grilling)
Instructions
- Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking the stuffed jalapenos.
- Stuff and Bake Jalapenos: Fill each jalapeno half with about 1 ounce of cream cheese. Place them on a baking sheet and bake for 25 to 30 minutes until tender. Remove from oven and let cool slightly.
- Assemble the Sandwiches: Lay out your bread slices: put one slice of sharp cheddar on two slices of bread and one slice of Monterey Jack on the other two slices. Slice the baked jalapenos into bite-sized pieces and distribute them evenly over the cheddar slices. Add the crispy bacon slices over the Monterey Jack bread. If desired, sprinkle chopped cilantro on one side. Combine the cheddar and Monterey Jack sides to form two sandwiches.
- Grill the Sandwiches: Place several pats of butter on top of each sandwich. Heat a skillet over medium-low heat, then place the sandwiches butter side down. Add extra pats of butter on the top side. Grill each side until the bread is lightly browned and crispy, and the cheese inside is melted and gooey, about 3-5 minutes per side.
