Instructions

  1. Prepare the vegetable base: Place the chopped onion, 1 seeded jalapeno, and garlic cloves in a food processor and pulse briefly until roughly chopped.
  2. Combine main ingredients: Add black beans, rolled oats, corn, green onion, cumin, curry powder, cayenne pepper, and breadcrumbs to the food processor. Pulse for 20 seconds to combine well, then scrape down the sides and pulse an additional 10 seconds to form a coherent mixture.
  3. Refrigerate the mixture: Transfer the black bean mixture to a bowl, cover it tightly, and refrigerate for at least 30 minutes to help it firm up and develop flavor.
  4. Roast the jalapenos: Preheat your broiler on high. Brush 6 jalapenos (2 for filling, 4 for topping) with olive oil. Broil them for about 10 minutes until their skins blacken and blister. Remove from oven and set aside to cool.
  5. Prepare the cream cheese filling: Dice the 2 roasted jalapenos reserved for the filling and mix them thoroughly into the softened cream cheese.
