Ingredients
Scale
Protein
- 1 lb chicken breast
- 2 tbsp jerk seasoning
Grains & Legumes
- 1 cup rice
- 1 can black beans (approximately 15 oz)
Vegetables & Produce
- 1 avocado
- 1/2 cup corn
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 lime, juiced
Seasonings
- Salt and pepper to taste
Instructions
- Prepare the chicken: Coat the chicken breast evenly with the jerk seasoning. This will infuse the chicken with the classic spicy, smoky flavors essential to this dish.
- Cook the chicken: Grill or pan-sear the jerk-seasoned chicken over medium-high heat for about 6-7 minutes per side until fully cooked and internal temperature reaches 165°F (74°C). Let it rest for a few minutes before slicing.
- Cook the rice: While the chicken cooks, rinse the rice under cold water until the water runs clear. Cook according to package instructions, typically simmering in water for about 15-20 minutes until tender and fluffy.
- Prepare the black beans and corn: Drain and rinse the canned black beans. If desired, warm the beans and corn together in a saucepan over low heat, seasoning lightly with salt and pepper.
- Assemble the bowl: Start with a base of cooked rice in each bowl. Top with sliced jerk chicken, black beans, corn, diced red onion, sliced avocado, and chopped cilantro.
- Add the finishing touches: Drizzle lime juice over the entire bowl to add brightness. Season with additional salt and pepper to taste.
- Optional enhancements: For extra heat, add a chopped jalapeño or a splash of hot sauce either during cooking or as a topping when assembling.
Notes
- To make the bowl spicier, add chopped jalapeños or hot sauce.
- Chicken thighs can be used instead of breasts for a juicier texture.
- This dish can be prepared ahead of time with ingredients stored separately and combined just before serving to maintain freshness.
