Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prepare it for baking.
- Cook Beef and Onion: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onions are softened. Drain any excess fat to keep the dish from being greasy.
- Season Beef: Stir in the taco seasoning packet and water into the cooked beef and onion mixture. Let it simmer for 2–3 minutes to blend the flavors, then remove it from the heat.
- Prepare Biscuit Base: In a small bowl, whisk together the Bisquick mix, milk, and eggs until smooth. Pour this batter evenly into the prepared baking dish.
- Bake Base: Bake the biscuit base in the preheated oven for about 10 minutes, or until it is lightly set. This creates a sturdy foundation for the casserole layers.
- Make Sour Cream Mixture: In another bowl, combine sour cream, mayonnaise, half of the shredded cheddar cheese, and diced green chilies. Mix well to create a creamy layer for the casserole.
- Assemble Layers: Spread the cooked beef mixture evenly over the baked biscuit base. Next, layer the sour cream mixture over the beef. Then top with the drained diced tomatoes and the remaining cheese.
