Description

This Juicy Japanese Hamburg Steak recipe features a delightful blend of ground beef and chicken, seasoned with sautéed onions, panko breadcrumbs, and a touch of nutmeg. Pan-fried to a perfect brown and then steamed for tenderness, it’s served with a rich homemade sauce made from ketchup, Worcestershire sauce, soy sauce, and butter. Ideal for a comforting meal, this dish pairs wonderfully with rice or steamed vegetables.

Ingredients

Scale

For the Patties

  • 1/2 onion, finely diced
  • 1 tbsp butter
  • 1/2 lb ground beef
  • 1/2 lb ground chicken
  • 1/2 cup panko breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • Salt and pepper to taste
  • 1/4 tsp nutmeg (optional)
  • 1 tbsp vegetable oil

For the Sauce

  • 1/4 cup ketchup
  • 1/4 cup Worcestershire sauce
  • 2 tbsp water
  • 1 tsp soy sauce
  • 1 tsp butter

Instructions

  1. Sauté the Onion: In a skillet over medium heat, melt the butter and sauté the finely diced onion until translucent. Once cooked, set aside to cool completely.
  2. Soak Panko Breadcrumbs: While the onion cools, place the panko breadcrumbs in a small bowl and pour in the milk to soak, making them soft and ready to mix.
  3. Mix the Meat and Ingredients: In a large bowl, combine ground beef, ground chicken, cooled sautéed onions, soaked panko breadcrumbs, egg, salt, pepper, and nutmeg if using. Mix thoroughly until well combined and sticky to help the patties hold together.
  4. Shape the Patties: Divide the mixture into two equal portions. Shape each portion into an oval-shaped patty, pressing gently to form a slight indentation in the center.
  5. Pan-Fry the Patties: Heat vegetable oil in a frying pan over medium heat. Place the patties in the pan and cook for about 3 to 4 minutes on one side until nicely browned. Carefully flip and cook the other side for another 3 to 4 minutes.
  6. Steam the Patties: Add 2 tablespoons of water to the pan, immediately cover with a lid, and let the patties steam for 5 to 6 minutes. This step ensures the patties cook through while remaining juicy.
  7. Prepare the Sauce: Remove the patties from the pan and set aside. In the same pan, add ketchup, Worcestershire sauce, extra water, soy sauce, and butter. Stir the mixture and simmer over medium heat for 2 to 3 minutes until the sauce thickens slightly.
  8. Serve: Pour the warm sauce over the hamburg steaks and serve immediately with rice or steamed vegetables for a delicious, hearty meal.

Notes

  • For extra flavor, you can add finely chopped garlic or grated ginger when sautéing the onions.
  • Make sure not to overmix the meat to keep the patties tender.
  • Pressing a small indentation in the center of each patty helps them cook evenly without puffing up.
  • Use a non-stick skillet to prevent sticking and achieve a nice sear on the patties.
  • Leftover patties can be refrigerated for up to 2 days and reheated gently on the stovetop or in a microwave.
