Scale
Dry Ingredients
- 2 cups old-fashioned rolled oats
- 1 tablespoon chia seeds
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Wet Ingredients
- 1 cup unsweetened almond milk (or any plant-based milk)
- 1/4 cup pure maple syrup
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- Juice of 1 lemon
Add-ins
- 1 cup fresh or frozen blueberries
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish and set aside to prepare for baking.
- Combine Dry Ingredients: In a large bowl, mix together the rolled oats, chia seeds, baking powder, ground cinnamon, and salt until evenly combined.
- Mix Wet Ingredients: Add the almond milk, maple syrup, unsweetened applesauce, vanilla extract, lemon zest, and lemon juice to the dry ingredient mixture. Stir thoroughly until the batter is smooth and all ingredients are well incorporated.
- Add Blueberries: Gently fold in the fresh or frozen blueberries, making sure they are evenly distributed throughout the mixture without breaking them up too much.
- Transfer and Spread: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly with a spatula to ensure uniform baking.
- Bake: Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until the top is golden brown and the oatmeal is fully set.
- Cool and Serve: Remove from the oven and let the baked oatmeal cool slightly before serving. Optionally, top with extra fresh blueberries or a drizzle of maple syrup for added flavor.
Notes
- You can substitute almond milk with any plant-based or regular milk of your choice.
- Frozen blueberries can be used directly without thawing; this prevents the batter from turning purple.
- For a nut-free version, ensure your plant milk and other ingredients are free from nuts.
- This dish can be stored covered in the refrigerator for up to 4 days and reheated before serving.
- Feel free to add nuts or seeds on top before baking for extra crunch.
