Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease an 8×8-inch square baking pan or line it with parchment paper for easy removal.
  2. Prepare crumb mixture: In a medium bowl, mix together the flour, sugar, baking powder, and salt. Add the cold, cubed butter and cut it into the dry ingredients using a pastry cutter or fork until the mixture becomes crumbly. Stir in the beaten egg until the dough just comes together.
  3. Form crust: Press about 2/3 of the crumb mixture into the bottom of the prepared pan to form the crust layer.
  4. Make lemon filling: In a separate bowl, whisk together the eggs, sugar, flour, baking powder, salt, lemon juice, and lemon zest (if using) until smooth.
  5. Assemble bars: Pour the lemon filling over the crust and spread it evenly. Then sprinkle the remaining crumb mixture over the lemon filling, covering it as evenly as possible.
