Instructions
- Combine Ingredients: In a small bowl or jar, whisk together the fresh lemon juice, lemon zest, Dijon mustard, honey or maple syrup (if using), salt, and black pepper until well mixed.
- Emulsify Dressing: Slowly drizzle the extra-virgin olive oil into the bowl while whisking continuously. Continue whisking until the dressing is fully emulsified and smooth in texture.
- Taste and Adjust: Taste your vinaigrette and adjust the seasoning with additional salt or pepper if needed to suit your preference.
- Store or Serve: Use the dressing immediately, or refrigerate it in an airtight container for up to 1 week. Remember to shake well before each use to re-emulsify.
