Instructions
- Prepare Zucchini Slices: Wash zucchinis thoroughly and slice them into rounds approximately half an inch thick to ensure even cooking.
- Mix Coatings: In one bowl, beat the eggs until frothy. In a separate bowl, combine the panko breadcrumbs, freshly grated Parmesan cheese, and Italian seasoning thoroughly.
- Coat Zucchini: Dip each zucchini slice into the beaten eggs, making sure it’s well coated, then press it into the breadcrumb mixture to cover evenly on both sides.
- Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) to prepare for cooking the zucchini slices.
- Air Fry Zucchini: Arrange the coated zucchini slices in a single layer in the air fryer basket without overlapping. Lightly spray the slices with olive oil to help them crisp up. Air fry for 10-12 minutes, flipping halfway through, until they turn golden brown and crispy.
