- 1 cup cherry tomatoes, halved
- ½ cup kalamata olives, pitted and halved
- ¼ cup red onion, finely chopped
- 2 tbsp capers, rinsed and drained
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh dill, chopped (optional)
- 1 tbsp olive oil
- 1 tsp red wine vinegar
Instructions
- Prepare the marinade: In a bowl, combine the olive oil, minced garlic, lemon zest and juice, dried oregano, ground cumin, smoked paprika, salt, and black pepper. Mix well to create a flavorful marinade.
- Marinate the fish: Place the white fish filets in a shallow dish and pour the marinade over them. Ensure each filet is evenly coated. Allow it to marinate for at least 10 minutes to absorb the flavors.
- Preheat oven and prepare baking dish: Preheat your oven to 375°F (190°C). Lightly grease a baking dish to prevent sticking.
- Arrange fish and toppings: Place the marinated fish filets in the baking dish. In a separate bowl, mix the halved cherry tomatoes, kalamata olives, red onion, capers, parsley, dill (if using), olive oil, and red wine vinegar. Spread this mixture evenly over and around the fish filets.
