- 1 packet taco seasoning mix
- Water as directed on taco seasoning packet

- 6 soft taco-sized flour tortillas
- 1 ½ cups shredded cheddar cheese
- 1 ½ cups shredded Monterey Jack cheese
- 1 ½ cups shredded mozzarella cheese
- 1 ½ cups pico de gallo
Instructions
- Prepare Beef: Brown the ground beef in a skillet over medium heat, breaking it into small pieces as it cooks to ensure even cooking and texture. Once fully browned, drain any excess grease to avoid a greasy final dish.
- Season Beef: Add the taco seasoning packet and the amount of water specified on the seasoning instructions to the skillet. Cook the beef mixture until the liquid is fully absorbed and the beef is flavorful and well-seasoned.
- Warm Tortillas: Moisten a paper towel slightly and wrap the flour tortillas in it. Microwave the wrapped tortillas for 30 seconds to soften them, making them pliable and ready for assembly.
- Assemble Tortillas: Lay each warmed tortilla flat and spoon 4 tablespoons of seasoned ground beef into the center. Add 2 tablespoons each of shredded cheddar, Monterey Jack, and mozzarella cheeses on top of the beef. Finally, spoon 2 tablespoons of fresh pico de gallo over the cheese layers.
- Heat and Roll: Microwave each assembled tortilla individually for 30 seconds to allow the cheeses to melt slightly, enhancing flavor and texture. After heating, roll the tortillas tightly to enclose the filling, making them easy to eat and serve immediately.
