Ingredients
Scale
Macaroni
- 1 lb elbow macaroni
Cheese Sauce
- 4 cups shredded sharp cheddar cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 4 cups whole milk
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp ground mustard (optional)
- Salt and pepper, to taste
Topping
- 1/2 cup breadcrumbs (optional)
- 1/2 tsp paprika (for garnish)
Instructions
- Cook the Pasta: Boil the elbow macaroni according to the package instructions until al dente. Drain well and set aside.
- Prepare the Roux: In a large pot over medium heat, melt the butter. Stir in the flour and whisk continuously for 1-2 minutes until the mixture becomes lightly golden, forming a roux that will thicken the sauce.
- Make the Sauce: Gradually add the whole milk to the roux while whisking constantly to prevent lumps. Continue cooking for about 5-7 minutes until the sauce thickens smoothly.
- Add Flavor and Cheese: Season the sauce with garlic powder, onion powder, ground mustard (if using), salt, and pepper. Slowly incorporate the shredded sharp cheddar, mozzarella, and grated Parmesan cheeses, stirring until all the cheese has melted and the sauce is smooth.
- Combine Pasta and Sauce: Add the cooked macaroni into the cheese sauce, mixing thoroughly to ensure every piece of pasta is coated evenly with the cheesy mixture.
- Assemble for Baking: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish and pour in the macaroni and cheese mixture. Evenly sprinkle the optional breadcrumbs over the top, then dust with paprika for color and flavor.
- Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and the cheese sauce is bubbling.
- Serve: Allow the baked macaroni and cheese to cool for 5-10 minutes before serving to set and enhance flavors.
Notes
- For a crispier topping, broil the mac and cheese for an additional 1-2 minutes after baking—but watch closely to prevent burning.
- Feel free to substitute half-and-half or 2% milk for whole milk for a lighter dish; however, the texture might be less creamy.
- Adding a pinch of cayenne pepper or hot sauce can give the dish a flavorful kick.
- Parmesan cheese can be replaced with pecorino Romano or extra cheddar if preferred.
- If you want extra gooeyness, sprinkle more mozzarella on top before baking.
