Ingredients
Scale
Meatloaf Mixture
- 1 pound ground chicken
- 1/2 cup Italian-style breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Topping and Garnish
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish or line it with parchment paper to prevent sticking.
- Mix Ingredients: In a large bowl, combine the ground chicken, Italian-style breadcrumbs, grated Parmesan, milk, egg, minced garlic, dried Italian seasoning, salt, and black pepper. Mix gently until just combined to avoid tough meatloaves.
- Shape Meatloaves: Divide the mixture evenly into six portions. Shape each portion into a small loaf and place them in the prepared baking dish, spaced slightly apart.
- Add Toppings: Spoon a dollop of marinara sauce over each mini meatloaf, then sprinkle shredded mozzarella cheese evenly on top of the sauce.
- Bake: Bake the mini meatloaves uncovered for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C) and the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven and garnish with chopped fresh parsley. Serve warm, optionally with spaghetti or a side salad for a complete meal.
Notes
- You can add chopped spinach or finely grated zucchini to the meat mixture for extra moisture and nutrition.
- Serve with spaghetti or a fresh side salad to round out the meal.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
