Description

Mini Chicken Parmesan Meatloaves are a delicious twist on the classic Italian-American comfort food. Made with ground chicken, seasoned with Italian herbs, and topped with marinara sauce and melted mozzarella, these individual meatloaves are perfect for a family dinner or meal prep. They bake quickly in the oven and are garnished with fresh parsley for a burst of flavor.

Ingredients

Scale

Meatloaf Mixture

  • 1 pound ground chicken
  • 1/2 cup Italian-style breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Topping and Garnish

  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish or line it with parchment paper to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the ground chicken, Italian-style breadcrumbs, grated Parmesan, milk, egg, minced garlic, dried Italian seasoning, salt, and black pepper. Mix gently until just combined to avoid tough meatloaves.
  3. Shape Meatloaves: Divide the mixture evenly into six portions. Shape each portion into a small loaf and place them in the prepared baking dish, spaced slightly apart.
  4. Add Toppings: Spoon a dollop of marinara sauce over each mini meatloaf, then sprinkle shredded mozzarella cheese evenly on top of the sauce.
  5. Bake: Bake the mini meatloaves uncovered for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C) and the cheese is melted and bubbly.
  6. Garnish and Serve: Remove from the oven and garnish with chopped fresh parsley. Serve warm, optionally with spaghetti or a side salad for a complete meal.

Notes

  • You can add chopped spinach or finely grated zucchini to the meat mixture for extra moisture and nutrition.
  • Serve with spaghetti or a fresh side salad to round out the meal.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
