- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 2 medium carrots, peeled and cut into sticks
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 0.5 cup radishes, thinly sliced
Breads
- 4 large pita breads or Moroccan msemen, cut into triangles
Dips
- 1 cup hummus
- 1 cup roasted red pepper muhammara
- 1 cup baba ganoush
Garnishes & Spices
- 0.25 cup pitted green olives
- 0.25 cup pitted black olives
- 2 tablespoons fresh cilantro or parsley, chopped
- 1 tablespoon toasted sesame seeds
- 0.5 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
Instructions
- Arrange Vegetables: Prepare all vegetables as described, slicing and cutting them neatly, then arrange in pointed, triangular groupings on a large serving platter. Alternate colors to create a visually appealing tent canopy effect.
- Warm and Prepare Flatbreads: Lightly warm the pita breads or msemen in a dry skillet over medium heat or in a preheated oven at 350°F (175°C) for 2-3 minutes. Cut the warmed breads into triangles and fan them out at the base of the vegetable arrangement on the platter.
- Prepare Spiced Dips: Spoon the hummus, roasted red pepper muhammara, and baba ganoush into small bowls. Sprinkle each dip evenly with ground cumin, smoked paprika, and toasted sesame seeds to enhance the flavors and add visual interest. Place these bowls at the center base of the ‘tent’ formation on the platter.
- Add Garnishes: Garnish the platter by placing the pitted green and black olives sporadically around the antipasti. Finally, sprinkle chopped fresh cilantro or parsley over the entire arrangement to add freshness and a festive touch.
- Serve: Present the platter immediately to guests and encourage them to dip the fresh vegetables and warm pita bread into the different spreads, combining the vibrant flavors to their liking.
Notes
- Use fresh and crisp vegetables for the best texture and colors.
- Moroccan msemen can be purchased at Middle Eastern markets or substituted with extra pita bread.
- To toast sesame seeds, dry roast them in a skillet over medium heat for 2-3 minutes until golden and fragrant.
- Adjust seasoning of dips with lemon juice or salt as desired before serving.
- This platter is best served fresh but can be prepped in advance by slicing vegetables and preparing dips separately.
