Description

These No Bake Chocolate Caramel Cheesecake Bites are a decadent and easy-to-make dessert featuring a chocolate cookie crust, creamy marbled chocolate and caramel cheesecake filling, topped with caramel drizzle and chocolate shavings. Perfect for parties or a sweet treat without the hassle of baking.

Ingredients

Scale

For the Crust

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips, melted
  • 1/2 cup caramel sauce, plus more for drizzling

For the Topping

  • 1/2 cup mini chocolate squares (such as Rolos), chopped
  • Chocolate shavings, for garnish

Instructions

  1. Prepare the Crust: In a medium bowl, combine the chocolate cookie crumbs and melted butter thoroughly. Press this mixture firmly into the bottom of a muffin tin lined with paper liners to form an even crust layer. Place the tin in the refrigerator to allow the crust to set firmly.
  2. Make the Cheesecake Base: In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy. Add the vanilla extract and mix well to combine all flavors evenly.
  3. Divide and Flavor the Filling: Split the cream cheese mixture evenly into two bowls. Stir the melted dark chocolate into one bowl to create the chocolate filling and stir the caramel sauce into the other bowl for the caramel filling.
  4. Assemble the Cheesecake Bites: Spoon the chocolate filling evenly over the chilled crusts in each muffin cup, then spoon the caramel filling on top. Using a toothpick, gently swirl the two fillings together to create a beautiful marbled effect.
  5. Chill to Set: Refrigerate the assembled cheesecake bites for at least 2 hours, or until they are firm and set.
  6. Add Toppings and Serve: Just before serving, drizzle additional caramel sauce over each cheesecake bite, then sprinkle with chopped mini chocolate squares and chocolate shavings for a delicious and decorative finish.

Notes

  • Ensure the cream cheese is softened to room temperature for a smooth mixture.
  • Use a muffin tin with paper liners for easy removal and serving.
  • Swirling the fillings too much will blend the flavors rather than creating a marbled effect—swirl gently.
  • For a firmer crust, you may chill the pressed crust mixture for 30 minutes before adding filling.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
