Ingredients
Scale
Wet Ingredients
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup milk
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
Dry Ingredients
- 2 cups granulated sugar
- 1/4 cup unsweetened cocoa powder
- 3 cups quick-cooking oats
Instructions
- Melt Butter and Combine Ingredients: In a saucepan, melt the butter over medium heat. Once melted, add the granulated sugar, milk, and unsweetened cocoa powder. Stir everything together until fully combined.
- Boil the Mixture: Bring the mixture to a boil while stirring constantly to prevent burning. Allow it to boil for 1 minute to ensure the sugar dissolves and the mixture thickens slightly.
- Add Peanut Butter and Vanilla: Remove the saucepan from heat. Stir in the creamy peanut butter and vanilla extract until the mixture is smooth and well combined.
- Incorporate Oats: Add the quick-cooking oats to the mixture. Stir thoroughly until the oats are evenly coated with the chocolate-peanut butter mixture.
- Form Cookies and Cool: Drop spoonfuls of the mixture onto wax paper or a silicone baking mat. Let the cookies cool and set for about 30 minutes until firm enough to handle.
Notes
- Use quick-cooking oats for best texture; old-fashioned oats may create a different texture.
- Be careful not to over-boil the sugar mixture to avoid a grainy texture in the cookies.
- Store cookies in an airtight container at room temperature for up to 5 days.
- For a vegan version, substitute butter and milk with plant-based alternatives.
