Instructions
- Melt the butter and mix liquids: In a medium saucepan, melt the unsalted butter over medium heat. Once melted, add the granulated sugar, milk, and unsweetened cocoa powder. Stir continuously to combine all ingredients well.
- Bring to a boil: Continue stirring the mixture until it reaches a rolling boil. Allow it to boil for 1 full minute while stirring constantly to prevent burning and ensure the sugar dissolves completely.
- Add peanut butter and vanilla: Remove the saucepan from heat. Stir in the creamy peanut butter and vanilla extract until the mixture is smooth and fully combined.
- Incorporate oats: Add the quick-cooking oats to the wet mixture and stir well until all oats are evenly coated with the chocolate-peanut butter mixture.
- Form cookies and set: Drop spoonfuls of the cookie mixture onto a sheet of wax paper or a silicone baking mat, shaping them into rounds. Allow the cookies to cool and set at room temperature for about 30 minutes before serving.
