Description
Classic no-bake cookies that bring back nostalgic flavors just like grandma used to make. These chocolatey, peanut butter oat cookies come together quickly without the need for an oven, perfect for a sweet treat any time.
Ingredients
Scale
Wet Ingredients
- 1/2 cup unsalted butter
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup peanut butter (or nut-free spread)
Dry Ingredients
- 1 1/2 cups granulated sugar
- 1/4 cup unsweetened cocoa powder
- 3 cups quick oats
- Pinch of salt
Instructions
- Melt the Butter and Combine Ingredients: Melt the butter in a medium saucepan over medium heat. Add milk, granulated sugar, and unsweetened cocoa powder, then bring the mixture to a boil. Let it cook for 1-2 minutes while stirring occasionally to ensure it doesn’t burn.
- Add Peanut Butter and Vanilla: Remove the saucepan from heat and immediately stir in the peanut butter and vanilla extract until the mixture is smooth and creamy, ensuring the peanut butter fully melts into the chocolate blend.
- Mix in Quick Oats and Salt: Stir in the quick oats and a pinch of salt until all the oats are well coated with the chocolate peanut butter mixture. The resulting dough will be thick and slightly sticky, perfect for forming cookies.
- Shape the Cookies: Line a baking sheet with parchment paper or a silicone baking mat. Drop spoonfuls of the cookie dough onto the sheet, spacing them approximately 2 inches apart. Flatten each cookie slightly with the back of a spoon for even shapes.
- Set the Cookies: Allow the cookies to cool at room temperature for 30 minutes to 1 hour until they firm up. For quicker setting, place the baking sheet in the refrigerator for about 15-20 minutes.
- Serve and Enjoy: Once the cookies are fully set and firm, they are ready to be enjoyed as a quick and comforting no-bake treat.
Notes
- Use quick oats for the best texture; old-fashioned oats can be used but will alter the cookie’s firmness.
- For a nut-free variation, substitute the peanut butter with a nut-free spread.
- Store the cookies in an airtight container at room temperature for up to a week or refrigerate to keep them fresh longer.
- Ensure the mixture reaches a gentle boil and cooks for the recommended time to ensure the sugar dissolves completely for proper cookie setting.
