Strawberry Filling

  • 1 (3-oz) package strawberry Jello
  • 1 cup boiling water
  • ¼ cup frozen strawberry daiquiri mix, thawed

  • 1 (12-oz) can evaporated milk, chilled

Crust

  • 3 cups graham cracker crumbs
  • 5 Tbsp powdered sugar
  • 12 Tbsp butter, melted


Instructions

  1. Dissolve Jello and Add Daiquiri Mix: In a bowl, dissolve the strawberry Jello powder in 1 cup of boiling water, stirring until completely dissolved. Then add the thawed strawberry daiquiri mix to the warm Jello. Set aside and allow the mixture to cool to room temperature.
  2. Beat Cream Cheese Mixture: Using a handheld mixer, beat the softened cream cheese, sugar, and vanilla extract together in a mixing bowl until smooth and creamy. Once combined, slowly mix in the cooled strawberry Jello mixture until well incorporated.
  3. Whip Evaporated Milk and Combine: In a separate clean bowl, whip the chilled evaporated milk with an electric mixer until it becomes light, fluffy, and slightly aerated. Gently fold the whipped evaporated milk into the cream cheese and Jello mixture, ensuring a smooth and even filling without deflating the whipped milk.
  4. Prepare the Crust: In another bowl, combine the graham cracker crumbs and powdered sugar. Pour in the melted butter and mix thoroughly until the crumbs are evenly coated and resemble wet sand. Press this crumb mixture firmly and evenly into the bottom of a 9″ x 13″ dish to form the crust base.
  5. Assemble and Chill: Pour the strawberry cheesecake filling over the pressed crust and spread it evenly. Cover the dish and refrigerate for at least 8 hours or overnight to allow the cheesecake to fully set and develop its flavors.
