Description

Nun’s Puffs are light, airy pastries made from a choux-like dough that puffs up beautifully in the oven. Perfect for breakfast or a sweet snack, these golden puffs are tender on the inside with a delicate crisp outside, often complemented with a sprinkle of sugar and served with honey or whipped cream.

Ingredients

Scale

Basic Ingredients

  • ½ cup (1 stick) unsalted butter
  • 1 cup milk
  • ¾ cup all-purpose flour
  • 4 eggs
  • ½–1 tablespoon sugar (optional, for sweetness)

Toppings

  • Sugar (for sprinkling)
  • Honey (for serving)
  • Whipped cream or fruit (optional toppings)

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin thoroughly to prevent sticking.
  2. Melt Butter and Heat Milk: In a saucepan over medium heat, melt the unsalted butter. Once melted, add the milk and bring the mixture to a low boil.
  3. Make the Dough: Stir the flour into the boiling butter and milk mixture all at once. Mix vigorously until a dough forms that pulls away from the sides of the pan, indicating it’s cooked through.
  4. Cool Dough: Remove the pan from heat and let the dough cool for 5 minutes. This prevents the eggs from cooking when added.
  5. Incorporate Eggs: Beat in the eggs one at a time, making sure each egg is fully blended and the mixture is smooth and glossy before adding the next.
  6. Add Sugar (Optional): If desired, stir in ½ to 1 tablespoon of sugar to add sweetness to the dough.
  7. Fill Muffin Cups: Divide the dough evenly among the 12 muffin cups, filling each about ¾ full. Sprinkle a little sugar on top for a sweet crust.
  8. Bake: Bake in the preheated oven for 30 minutes or until the puffs have risen and are golden brown and crisp on top.
  9. Serve: Serve warm with honey drizzled on top, and optionally with whipped cream or fresh fruit for an extra special treat.

Notes

  • Ensure the dough is cooled before adding eggs to prevent them from scrambling.
  • Use a muffin tin for uniform sizes and better puffing.
  • Sugar sprinkled on top adds a pleasant crunchy texture when baked.
  • Serve immediately after baking for the best texture and taste.
  • Variations can include adding vanilla extract or lemon zest for extra flavor.
