Ingredients
Scale
Ingredients
- 2 cups cabbage, shredded
- 1/2 cup all-purpose flour
- 1 egg
- 1/4 cup dashi or vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- 2 tablespoons okonomiyaki sauce
- 1 tablespoon mayonnaise
- Oil for frying (about 2 tablespoons)
Instructions
- Prepare the batter: In a large bowl, combine shredded cabbage, all-purpose flour, egg, dashi or vegetable broth, soy sauce, sesame oil, and chopped green onions. Mix thoroughly until the ingredients form a cohesive batter.
- Heat the skillet: Place a skillet over medium heat and add enough oil to coat the surface. Allow the oil to heat until shimmering but not smoking.
- Shape and cook pancakes: Pour half of the batter into the skillet, shaping it into a round pancake approximately 6 inches in diameter. Cook for 3 to 4 minutes until the bottom is golden brown.
- Flip and cook the other side: Carefully flip the pancake and cook for another 3 to 4 minutes until the other side is also golden brown and the pancake is cooked through.
- Repeat for remaining batter: Remove the cooked pancake to a plate and repeat the process with the remaining batter to make a second pancake.
- Add toppings and serve: Drizzle each pancake generously with okonomiyaki sauce and mayonnaise. Serve hot for the best flavor and texture.
Notes
- Using dashi broth provides authentic umami flavor, but vegetable broth is a great vegetarian alternative.
- You can add other ingredients like shrimp, bacon, or tempura scraps to customize your okonomiyaki.
- Ensure the skillet is not too hot to prevent burning before the center cooks through.
- Okonomiyaki sauce can be found in Asian grocery stores or online; it’s a sweet-savory sauce essential to the dish.
- Leftover okonomiyaki can be reheated gently in a skillet to retain crispiness.
