- 2 large yellow onions, thinly sliced
- 1 cup shredded sharp cheddar cheese
Batter
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- 1/2 cup cold water (more as needed)

Instructions
- Prepare Onions and Cheese: Peel and thinly slice the onions into rings or half-moons. In a large bowl, toss the sliced onions with shredded sharp cheddar cheese until the cheese is evenly distributed and set aside.
- Make the Batter: In a separate large bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, garlic powder, onion powder, and smoked paprika. Gradually add cold water while mixing until you achieve a thick batter consistency.
- Combine Mixtures: Fold the onion and cheddar mixture into the batter gently, ensuring all pieces are evenly coated with the batter.
- Heat Oil: Pour vegetable oil into a deep skillet or heavy-bottomed pot to about 2 inches depth and heat it to 350°F (175°C). Use a thermometer to check the temperature for accurate frying.
- Fry Chips: Carefully drop spoonfuls of the coated onion-cheese mixture into the hot oil. If needed, flatten them slightly using a spatula for even cooking. Fry in batches to avoid overcrowding the pan.
- Cook Until Golden: Fry the chips for about 3–4 minutes per side, turning occasionally, until they are golden brown, crisp, and cooked through.
- Drain and Cool: Use a slotted spoon to remove the chips from oil and drain on paper towels to remove excess oil. Allow to cool slightly before serving to enhance crispiness.

- For extra crispy chips, chill the batter for 15–20 minutes before frying.
- You can substitute part of the sharp cheddar with pepper jack cheese for a spicier flavor.
