- 1 teaspoon sesame oil
- 1/2 cup warm water (to thin as needed)
- 1 garlic clove, minced
- 1/2 teaspoon grated fresh ginger
Instructions
- Cook Noodles: Cook noodles according to package instructions until tender. Drain and set aside.
- Cook Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breasts and cook until golden brown and cooked through, approximately 5–6 minutes. Remove chicken from the pan and set aside.
- Sauté Vegetables: In the same pan, add the sliced red bell pepper and shredded carrots. Sauté for 2–3 minutes until the vegetables are just tender but still crisp.
- Prepare Sauce: While vegetables cook, whisk together creamy peanut butter, soy sauce, honey, rice vinegar, sriracha, sesame oil, minced garlic, grated ginger, and warm water in a bowl until smooth and pourable. Adjust water to achieve desired consistency.
- Combine Ingredients: Return the cooked chicken to the pan along with the drained noodles. Pour the peanut sauce over everything and toss to coat evenly. Cook for another 1–2 minutes to heat through and meld flavors.
