Instructions
- Prepare Pecan Clusters: Line a baking sheet with parchment paper. Arrange pecan halves into clusters of 3 to 4 pieces each, spacing them a couple of inches apart to allow room for caramel and chocolate layers.
- Melt Caramel: In a small saucepan over low heat or in a microwave-safe bowl, melt the caramels with the heavy cream, stirring frequently until the mixture is completely smooth and creamy.
- Apply Caramel: Spoon about 1 tablespoon of the melted caramel over each pecan cluster. Let the caramel settle slightly before transferring the baking sheet to the refrigerator to chill for 10–15 minutes until the caramel sets firm.
- Melt Chocolate: Meanwhile, melt the chocolate chips in the microwave in 30-second intervals, stirring after each, until smooth and fully melted. Stir in coconut oil or shortening if you desire a glossier, smoother chocolate finish.
