Ingredients
Scale
Truffle Mixture
- 1 ½ cups white chocolate chips
- ¼ cup canned crushed pineapple, well-drained
- 2 tablespoons unsalted butter
- 2 tablespoons heavy cream
- ¼ teaspoon coconut extract
- ½ cup sweetened shredded coconut (plus extra for coating)
- Pinch of salt
- Optional: 1 tablespoon rum or ½ teaspoon rum extract
Instructions
- Melt Ingredients: In a medium saucepan over low heat, combine the white chocolate chips, unsalted butter, and heavy cream. Stir constantly until everything is melted and the mixture becomes smooth and creamy. Remove the saucepan from heat carefully to avoid overheating.
- Mix in Flavors: Stir in the well-drained crushed pineapple, coconut extract, shredded coconut, a pinch of salt, and the optional rum or rum extract. Mix thoroughly until all ingredients are well incorporated into a thick, uniform mixture.
- Chill the Mixture: Transfer the mixture to a bowl and place it in the refrigerator for 1 to 2 hours. Chill until the mixture is firm enough to scoop and shape into balls.
- Form Truffles: Using your hands or a small scoop, form 1-inch portions into round balls. Take care to evenly portion each truffle for consistent size and texture.
- Coat with Coconut: Roll each truffle in extra shredded coconut to coat the exterior fully, giving a delicate crunch and enhancing the tropical flavor.
- Final Chill: Arrange the coated truffles on a parchment-lined tray and refrigerate for at least 30 minutes to firm up before serving. Keep refrigerated until ready to enjoy.
Notes
- Ensure the crushed pineapple is very well-drained to prevent excess moisture which can affect the texture of the truffles.
- Store the truffles in an airtight container in the refrigerator for up to one week to maintain freshness.
- For a tropical variation, add finely chopped dried mango or a sprinkle of lime zest to the mixture before chilling.
