Description

Delicious and easy-to-make Pizza Enchiladas combine the flavors of classic pizza wrapped in soft flour tortillas and baked with a generous amount of pizza sauce and melted mozzarella cheese. Perfect for a family dinner or casual gathering, these enchiladas bring together pepperoni, olives, and green bell pepper for an irresistible meal everyone will love.

Ingredients

Scale

Enchiladas

  • 8 large flour tortillas
  • 2 cups shredded mozzarella cheese
  • 1 cup sliced pepperoni
  • 1 1/2 cups pizza sauce
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped green bell pepper (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder

Garnish

  • Fresh basil or parsley (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the enchiladas.
  2. Prepare Baking Dish: Spread about 1/2 cup of pizza sauce evenly on the bottom of a 9×13-inch baking dish to prevent sticking and add flavor.
  3. Assemble Tortillas: Lay out each tortilla and spread a thin layer of pizza sauce over it. Then sprinkle mozzarella cheese, sliced pepperoni, olives, and chopped green bell pepper evenly across the tortilla.
  4. Roll Tortillas: Roll up each tortilla tightly and place them seam-side down into the prepared baking dish to keep them closed while baking.
  5. Add Toppings: Pour the remaining pizza sauce evenly over the rolled tortillas in the dish.
  6. Season and Cheese: Sprinkle the tops of the rolled tortillas with the remaining mozzarella cheese, dried oregano, and garlic powder for added flavor.
  7. Bake: Bake uncovered in the preheated oven for 20-25 minutes until the cheese is melted, bubbly, and slightly golden.
  8. Garnish and Serve: Remove from oven and garnish with fresh basil or parsley before serving for a fresh and vibrant finish.

Notes

  • Feel free to substitute pepperoni with cooked sausage or vegetables for a different twist.
  • For a gluten-free version, use gluten-free tortillas.
  • You can add extra cheese inside or on top depending on your preference.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
  • Optional toppings like olives and bell peppers can be adjusted or omitted according to taste.
