Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, combine the oat flour, vanilla protein powder, almond flour, and salt. Stir until evenly mixed.
- Incorporate Wet Ingredients: Add the softened coconut oil and maple syrup to the dry mixture and stir until the mixture becomes crumbly. Gradually add almond milk, one tablespoon at a time, stirring until a soft dough forms that holds together well.
- Roll Out Dough: Place the dough between two sheets of parchment paper and roll it out to about 1/4 inch thickness, ensuring an even layer for cutting.
- Cut Dough Rectangles: Using a knife or pizza cutter, cut the dough into rectangles approximately 3 by 4 inches in size. Collect and reroll any scraps to avoid waste.
- Add Filling: Arrange half of the dough rectangles on the prepared baking sheet. Spoon around 1 teaspoon of your chosen fruit preserves onto the center of each rectangle, spreading slightly but leaving a border around the edges free of filling.
- Seal Pop Tarts: Place the remaining rectangles over the filled ones, then press the edges together using a fork to seal the pop tarts securely, preventing the filling from leaking during baking.
