Scale
Dry Ingredients
- 1 ½ cups rolled oats
- ¼ cup almond flour
- ½ teaspoon cinnamon
- ¼ teaspoon salt
Wet Ingredients
- 1 cup grated carrots
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 large egg
- ½ cup unsweetened applesauce
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Prepare the Dough: In a large bowl, combine the rolled oats, grated carrots, almond flour, cinnamon, and salt. Add the honey or maple syrup, vanilla extract, egg, and unsweetened applesauce. Mix thoroughly until all ingredients are evenly distributed and a sticky dough forms.
- Shape the Cookies: Scoop the dough by tablespoonfuls, form each into a ball, and then flatten slightly with your hands. Arrange the shaped cookies on the lined baking sheet with some space in between to allow for spreading.
- Bake the Cookies: Place the baking sheet in the preheated oven and bake for 10 to 12 minutes or until the cookies turn golden brown and are set. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- You can substitute honey with maple syrup for a vegan option.
- Ensure the grated carrots are finely shredded to keep the cookie texture pleasant.
- Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
- For added texture, consider mixing in a small handful of chopped nuts or raisins.
