Instructions
- Roast the Beets: Preheat your oven to 400°F (200°C). Place the diced beets on a baking sheet lined with parchment paper and roast for 25-30 minutes, or until they are tender and easily pierced with a fork. Allow them to cool slightly.
- Cook the Jam: Once the beets are roasted, transfer them to a saucepan. Add the sugar, water, lemon juice, apple cider vinegar, and salt. Bring to a boil over medium-high heat, then reduce to a simmer.
