Description

This Roasted Garlic Cheddar Cauliflower Soup is a comforting and creamy dish made by roasting cauliflower and garlic to bring out their natural sweetness, then blending with sautéed onions, vegetable broth, and sharp cheddar cheese for a rich, flavorful soup perfect for a cozy meal.

Ingredients

Scale

Vegetables

  • 1 large head of cauliflower, chopped
  • 1 head garlic
  • 1 onion, diced

Other Ingredients

  • 2 tablespoons olive oil
  • 3 cups vegetable broth
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Roast the Vegetables: Preheat your oven to 400°F (200°C). Drizzle the chopped cauliflower and whole head of garlic with olive oil. Spread them on a baking sheet and roast for 30 minutes until tender and caramelized.
  2. Sauté the Onion: While the cauliflower and garlic are roasting, heat a pot over medium heat and sauté the diced onion until soft and translucent, about 5–7 minutes.
  3. Simmer Soup Base: Add the roasted cauliflower, squeezed roasted garlic cloves (squeeze out the softened cloves from the head), and vegetable broth to the pot. Bring to a simmer and cook for 10 minutes to meld flavors.
  4. Blend the Soup: Carefully blend the mixture until smooth using an immersion blender or in batches in a countertop blender. Return soup to pot if needed.
  5. Add Cheese and Season: Stir in the shredded sharp cheddar cheese until melted and fully incorporated. Season with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and garnish with fresh parsley if desired. Serve warm and enjoy.

Notes

  • Roasting the garlic whole softens it and mellows its flavor, creating a rich sweetness in the soup.
  • For a thinner soup, add more vegetable broth as desired.
  • This soup can be made ahead and stored in the fridge for up to 3 days or frozen for longer storage.
  • Use sharp cheddar for the best depth of flavor; mild cheddar will result in a less intense taste.
  • For a dairy-free version, substitute the cheddar cheese with a vegan cheese alternative or nutritional yeast.
